A yummy dinner

Every now and then I try one of the Campbells recipes and I find they are always good...comfort food for sure. Last night we tried this one and LOVED it...so I thought I'd share:

Tuna Penne Bake

Ingredients:

1 can Campbell's Condensed Low Fat Cream of Celery Soup
2 1/2 cups uncooked dry penne pasta
1 cup frozen peas
2/3 cup 1% milk
2 cans tuna, drained and flaked
3 tbsp whole grain Dijon mustard
1 tbsp lemon juice
1/2 cup shredded, sharp Cheddar cheese (we used way more than recommended)
1 cup mixture of coarsely chopped onion and mushrooms (we left out the mushrooms and only added about 2 tbsps of onions)
Salt & pepper

Directions:

1. Prepare pasta according to package directions, omitting salt and adding peas for last 5 minutes of cooking time. Drain and set aside.

2. Combine in 2 qt (2 L) baking dish, soup, milk, tuna, mustard, lemon juice and half of cheese. Gently stir in pasta, peas and onion-mushroom mixture. Top with remaining cheese. Sprinkle with pepper.

3. Bake at 400°F (200°C) until bubbling and hot - about 30 minutes.

Next time I make this I might add more peas, more onions, a bit more mustanrd...and even more cheese. Because cheese is the best.


A little while after dinner we also whipped up one of our favourite little treats...


And though I'm sure everyone has made this at some point or another, they couldn't be easier. Wash strawberries, cut off tops. Melt chocolate chips (or a bar or two of Dairy Milk chocolate) by putting a measuring glass in a pot of simmering water on the stove. Dip. Devour. Repeat.
